It’s been a long time since I posted on here and I am truly sorry, life just got in the way and (when I feel up to it) I will explain. But I’m right back on it now, starting with this week’s Meal Plan. I’m having to tighten the purse strings significantly for the foreseeable future and so I’ve tried to create a plan that uses up a lot of what I have in the freezer/cupboards already! You might remember my post about moving towards a simpler life and the food challenge I set myself back in January? Well I’m doing something similar this time round too. Plus my freezer needs defrosting and I have a bucket list of travel destinations that just keeps getting bigger and bigger so I really need to focus on saving money for travel too!

The hubby has kick-started back into his training regime after an injury a couple of months ago and so the whole family is on a high-protein, reduced carb diet to make it easier! This means we are using lots of recipes from Lean in 15 and also adapting other favourite recipes to fit.
I’m still trying to eat within a budget (not particularly easy when you are following the principles of the Lean in 15 diet to be honest) so we shall see how that goes!
It was my hubby’s birthday yesterday so this week’s meal plan is a bit late as we were busy celebrating!
This week is going to be super busy, plus we are all back to work/school *eurgh* and so I’m not going to be wanting to spend much time in the kitchen (tbh I never ever want to spend much time in the kitchen anyway ha!) so this week’s recipes are simple and quick family meals. Also between birthday celebrations and Easter half term we’ve spent a fair bit so I’m sticking to a super thrifty budget this week, and as before any new recipes are marked with an asterisk* 🙂
I’m travelling back from Aberdeen today (well technically Glasgow as I arrived here last night!) and plan to pop into the supermarket on my way home to do our big shop for this week. I’m looking for easy meals that I can throw together without a fuss and some lighter dishes to make the most of the weather whilst the sunshine lasts. Anyone else struggle to eat heavy meals when the weather is nice?
My plan this week was to have another #mealplanningmonday post to share with you (and to do so every Monday) but sometimes life just… gets in the way…
Sadly my great uncle passed away and so tomorrow I fly up to Scotland to go to his funeral and to take care of my Nan – my flight is early morning and I’m not back until Saturday which means I’ll spend most of this week in my favourite place (unfortunately not for a positive reason).
The week after I’m back up there twice – once for a meeting and the other time to see Still Game live and so the next two weeks will be really hectic and busy for me.
As such I’m not going to have the time to plan out all of our meals, shop to a budget or cook nice fresh food for my family – Scott will be in charge of the cooking for the next few days so tonight I’ll stock up the fridge with some super easy basics for the two of them to eat (also he’s having his friends up one evening so that night they will probably order in takeaway *there goes the minimal spending budget ha!*
